This month, ideas from Rosa and Ernie, who have run
a children's home in Durban, South Africa, for the past 26 years.

Jack, the Beanstalk and Salad
1 tin green beans, strained
1 tin butterbeans
1 tin baked beans in tomato sauce
2 onions
2 cloves garlic
Quarter cup vinegar
Add three or four tablespoons of fruit chutney/apricot jam
Spice up with curry powder, chilli ...
Heat cooking oil in a pan, brown the onions and garlic and then add the vinegar, fruit chutney and/or jam and the spices. Stir in the beans and simmer for half an hour.
Serve with a salad — a tasty, healthy meal.
Auntie Rosa's Sweetheart Pie
1 can creamed sweet corn
1 chopped onion
2 eggs
2 tablespoons flour
2 tablespoons sugar
1 tablespoon butter or margarine
A little milk, salt and pepper.
Mix all together, pour into a pie crust. Sprinkle some grated cheese on top and bake at 180° until set.
